Huntington Estate - Semillon Sauvignon Blanc
Crisp, citrus freshness.
WINEMAKING The Semillon was picked 22/2 at 10.8 Bé, and the Sauvignon Blanc on the 16/02 at 11.7 Bé. Each variety underwent separate cold fermentation for 12 days, followed by blending. The final blend was 30% Sauvignon Blanc and 70% Semillon to emphasise the citrus driven dryness of a Mudgee Semillon, with fore palate tropical characters from the Sauvignon Blanc. Bottled 06/07 at 11.5% alc.
IN GLASS Pale straw.
IN NOSE Passionfruit, melon, honeysuckle.
IN MOUTH Leading tropical fruit characters of passionfruit and touches of white lily followed by orange peel, lemon zest and citrus florals. Incredibly crisp. Rounded in palate whilst maintaining clean, dry structure. Very well-balanced acid, low residual sugar for a dry and lingering finish.
DRINK WITH Tapas and Mediterranean inspired dishes.
